Chicken stew with mixed vegetables is a wholesome and flavorful meal that brings together tender chicken pieces, colorful vegetables, and a rich, aromatic sauce. This comforting dish is loved for its warmth, simplicity, and flexibility — you can easily adapt it with whatever vegetables are in your kitchen. The slow simmering process enhances the flavors, creating a hearty stew that pairs beautifully with rice, chapati, ugali, or mashed potatoes.

Prepare the Ingredients

Begin by washing and cutting your chicken into medium pieces. You can use thighs, drumsticks, or a whole chicken cut into portions. Wash and chop your choice of vegetables — popular options include carrots, potatoes, peas, green beans, and bell peppers. Dice two ripe tomatoes, one onion, and one or two cloves of garlic. Gather seasonings such as salt, black pepper, paprika, curry powder, and herbs like thyme or rosemary. These ingredients form the base of the delicious chicken stew with mixed vegetables.

Brown the Chicken

Heat two tablespoons of cooking oil in a large pot over medium heat. Add the chicken pieces and fry them until golden brown on all sides. Browning helps seal in the juices and deepens the flavor. Once done, remove the chicken and set it aside. In the same pot, sauté chopped onions until soft and lightly browned. Add garlic and stir for a minute until it releases its aroma.

Build the Stew Base

Add the diced tomatoes and cook them down until they form a thick sauce. If the mixture begins to dry out, add a little water. For a richer flavor, stir in a spoonful of tomato paste. Add curry powder, paprika, and thyme, mixing thoroughly to combine the spices. Allow this mixture to simmer for a few minutes so the flavors come together. This is the flavorful base that defines your chicken stew with mixed vegetables.

Add Chicken and Vegetables

Return the browned chicken pieces to the pot and stir until coated in the sauce. Add water or chicken stock until the meat is halfway submerged. Bring to a gentle boil, then reduce the heat and cover. Let the stew simmer for about 30 minutes, stirring occasionally. Add the chopped vegetables starting with the firm ones like carrots and potatoes, then include softer vegetables such as peas and bell peppers later to prevent overcooking. Continue simmering for another 15 minutes until all ingredients are tender and the sauce thickens naturally.

Serve and Enjoy

Taste and adjust seasoning if needed. When ready, garnish with fresh coriander or parsley for color and aroma. Serve your chicken stew with mixed vegetables hot alongside rice, chapati, or ugali for a comforting, satisfying meal. This versatile dish not only nourishes but also brings a touch of homely warmth to your table.
