500 grams boneless chicken pieces
1 cup plain yogurt
1 tablespoon lemon juice
1 tablespoon ginger-garlic paste
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
½ teaspoon turmeric
1 teaspoon chili powder, adjust to taste
1 tablespoon cooking oil
Salt to taste

Some cooks add a small pinch of red food coloring for a vibrant appearance, but this step is optional and does not affect flavor.

Preparing the Chicken for Marination

To begin, rinse the chicken under clean running water and pat it completely dry using paper towels. Removing excess moisture helps the marinade stick better. Next, cut the chicken into medium-sized cubes. Uniform pieces ensure even cooking and prevent some pieces from drying out while others remain undercooked.

Preheat your oven to 200°C before cooking. While the oven heats, thread the marinated chicken pieces onto skewers. If you do not have skewers, arrange the pieces evenly on a lined baking tray. Leave a small gap between pieces to allow hot air to circulate properly.

Place the tray in the oven and bake for about 20 to 25 minutes. Turn the chicken halfway through cooking to ensure even browning. Toward the end, switch to the grill or broil setting for a few minutes to achieve a lightly charred finish. This step enhances the smoky character typical of chicken tikka.

Always check that the chicken is fully cooked before serving. The internal temperature should reach a safe level, and the juices should run clear. Avoid overcooking, as excessive heat can dry out the meat.

Cooking Chicken Tikka on a Stovetop

If you prefer a stovetop method, heat a grill pan over medium heat. Lightly grease the pan with a small amount of oil. Place the marinated chicken pieces onto the hot surface without overcrowding the pan.

Cook the chicken for several minutes on each side. Turn occasionally to ensure even cooking and to develop char marks. Because stovetop heat can vary, monitor the pieces closely. The chicken should be golden on the outside and fully cooked inside.

This method works well for smaller batches and still produces flavorful chicken tikka with a satisfying grilled texture.

Grilling Chicken Tikka Outdoors

An outdoor grill delivers excellent smoky flavor. Preheat the grill and lightly oil the grates. Thread the marinated chicken onto skewers and place them over direct heat.

Cook for about 10 to 15 minutes, turning occasionally. Keep the lid closed when possible to retain heat. Outdoor grilling enhances the traditional taste of chicken tikka, especially if you prefer stronger char and smoky notes.

Flavor Tips for Perfect Chicken Tikka

To elevate your chicken tikka, consider a few practical tips. First, use full-fat yogurt for a richer marinade. Second, balance heat carefully. If you prefer mild flavor, reduce the chili powder slightly. On the other hand, if you enjoy spice, increase it gradually rather than adding too much at once.

Additionally, do not skip resting time after cooking. Allow the chicken to sit for a few minutes before serving. Resting helps redistribute juices and keeps the meat tender.
